Tips for getting perfect mini bread loaves

Make sure to preheat your oven first. This way, your bread will bake nice and evenly.

Go for a light-colored pan. If you're using a dark one, it might make the bottom of your bread to overcook. In that case, just place some parchment paper in the bottom of your pans.
Don't overfill your pan. The TGC mixes are perfect for making around 4 mini loaves. Most mini loaf pans are about 5” x 3”, and you should fill them about 2/3 to 3/4 full. A quick trick to check the fill level is the “finger test.” Just lay your index finger horizontally across the top of the pan; the batter should be about one to two finger joints below the edge. This way, your loaves can rise nicely without spilling over.
Get your pan ready. Just spray it with some nonstick cooking spray or line it with parchment paper. Parchment paper is great because it makes taking out the baked loaves a breeze, and you'll end up with nice-looking loaves to share. Plus, it keeps the bottom from getting too brown.
Rotate the Pans. Turn the pans halfway through baking to make sure they brown evenly.
Don't Pack the Oven Too Full. Try not to cram too much into the oven, or it might mess with the airflow and cause your baking to come out unevenly.
Make sure your loaves are totally baked. Stick a toothpick in the middle, and if it comes out clean or just with a few moist crumbs, they're ready.
